The Book Forces You to an Online Subscription to See What the Book Leaves Out

In my opinion, it's nearly criminal what Cisco is doing here. I attended the first course of Cisco Networking Academy without a book. It's difficult reading online and too often you need to jump back and forth on slower-than-page-turning web pages to compare and make sense of information. Even after you find the correct web page, you may not be able to see the information until you stumble on to the correct clickable index link. It virtually forces you to buy the book. So, I bought this book to accomplish my reading offline while attending the second course. In virtually every case where there is a figure with a listing, the figure in the book is incomplete. They force you to go online to scroll a graphic to reveal the relevant information. That means this book is worthless outside of the short period of time your online subscription is valid. Once you lose access to the online course, you will lose access to the information which is critical to learning the subject this book claims to teach. Also, the book contains many mistakes. The good news for me is that I've studied and administrated over networks for many years and the subject of networking is familiar to me. My goal was to learn Cisco. I am disappointed at how Cisco teaches "Introduction to Networks" compared to other textbooks I own. Each new concept is presented in a confusing manner. Many of my fellow students of this Cisco course seem hopelessly confused. The value of Cisco knowledge is high. Also, they provide an excellent network simulator called Packet Tracer. However, for those new to the subject, I strongly suggest you learn network basics from another source before beginning your Cisco journey.

Brave hearts will want to immediately dive into the Variety and Special Meats chapter for some deviled pork liver; hog's head stew; and brains and eggs. The upper crust might prefer a pork pie. Choices include spicy Tennessee sausage; Pork, Apple and Raisin; or Bacon and Corn. Ham Croquettes with Parsley Sauce

Makes 6 servings

I am still on the bandwagon to restore all croquettes (meat, poultry, and seafood) to the prominent role they once played in every country-club dining room and department-store restaurant in the South, and none do I relish more than those made with some form of ham and served with a mustard, tomato, or cream sauce, or with this subtle parsley sauce. In truth, a well-made, carefully fried ham croquette is delicious just by itself (either as an appetizer or main course), and for ideal texture, I remain convinced that the mixture for these croquettes should be chilled overnight before being formed into patties. As with all croquettes, feel free to experiment with different secondary ingredients (olives, capers, bell peppers, and so on).

For the Sauce:
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup whole milk
Salt and freshly ground black pepper to taste
2 tablespoons minced fresh parsley leaves

For the Croquettes:
4 tablespoons (1/2 stick) butter
3 scallions (white parts only), finely chopped
3 tablespoons all-purpose flour, plus extra for dredging
1 cup milk
4 cups coarsely chopped cooked ham
3 large egg yolks
1 tablespoon Dijon mustard
1/4 teaspoon dried sage, crumbled
Salt and freshly ground black pepper to taste
1 large egg, beaten with 2 tablespoons water
2 cups fine dry bread crumbs
Peanut oil for frying

1. To make the sauce, melt the butter in a small saucepan over moderately low heat, add the flour, and stir till a smooth paste forms. Gradually add the milk, stirring till thickened and smooth, 3 to 4 minutes. Add the salt and pepper and parsley, stir till well blended, and keep the sauce warm over very low heat.

2. To make the croquettes, melt the butter in a saucepan over moderate heat, add the scallions and flour, and whisk till soft and well blended, about 2 minutes. Whisking rapidly, add the milk till well blended; add the ham, stir well, and remove from the heat. Whisking rapidly, add the egg yolks, return to the heat, add the mustard, sage, and salt and pepper, and whisk till well blended. Scrape the mixture into a dish, cover, and refrigerate overnight.

3. With your hands, divide the mixture into 6 balls and roll lightly in the extra flour. Pat the balls into smooth oval patties, dip briefly into the egg wash, dredge in the bread crumbs, and place on a plate till ready to fry.

4. In a large, heavy skillet, heat about 1 inch of oil over moderately high heat for about 1 minute, fry the patties till golden brown, about 3 minutes on each side, and drain briefly on paper towels. Serve the croquettes with the parsley sauce on the side.

James Beard Award Number 3?

If James Villas doesn't garner his third James Beard award for PIG, I'll be very surprised.

It's been said that in the South every part of the pig except the squeal is used. As I read my way through PIG, I about halfway expected Villas to show us a recipe using the squeal.

This is an exeptional book. You know when you buy a cookbook by James Villas that every recipe has been tested and works. You know Villas wrote every word himself....not a given in these days of ghost written celebrity cook books. Villas is a masterful writer. His directions are clear and thorough. The book is beautiful.

James Villas is a native of North Carolina. He still comes back home on a regular basis to stock up on Southern products. If I had to nominate just 2 cook book writers for my Southern hall of fame, they would be Jean Anderson (LOVE AFFAIR WITH SOUTHERN COOKING, another North Carolina native who had the good sense to move back home from NYC, and James Villas. We're still working on him.

PIG is a must buy for anybody with a love for pork and the food of the South.

My family received this Christmas gift from Amazon containing concise and delicious recipes, a part of Southern culinary tradition. I made one of several sausages after getting up before daylight on a Saturday morning.. The aroma woke all,and everyone appreciated the surprise and wonderful flavor. You will enjoy the taste and stories which come from these Southern traditions.A wonderful cookbook. My son is a top of the line chef who recommended this book and uses it as well. Cook like a pro,and make "the best ribs in town."

A Guide for the rest of us.

Kivi understands that marketing a nonprofit is a whole different animal. Anyone in charge of marketing/promotions for a nonprofit understands the budget constraints and organizational push-back that comes with the territory. Kivi writes this book with all those obstacles in mind. Not only does this book help people new to the concepts of marketing, but also to those who are familiar with them but now need to apply them to the nonprofit world.

The book is not only helpful to those who are in charge of external communications but anyone involved in representing the organization. This book would be a great addition to the library of any development team or nonprofit leader. The clear explanations and practical applications really made me feel confident in my new found responsibilities at work. I worried that the content of this book might be just a rehashing of nonprofit-marketing content from Kivi's blog or other sites but was very happy to find a wealth of new practical information organized in a very clear way.

I would highly recommend this book to anyone who is seeking out ways to get new people interested in getting involved with your nonprofit.

For Great Ideas from the Networked Nonprofit

I've been following Kivi Leroux Miller's posts on Kivi's Nonprofit Communications Blog for about a year, and she always adds value. So, when her new book The Nonprofit Marketing Guide: High-impact, Low-Cost Ways to Build Support for Your Good Cause was released last Spring I was ready to buy. It's bound to become a classic.

The Guide includes plenty of smart, timely, and fresh advice from someone who clearly understands nonprofit realities. Recognizing the limitations we face, Miller includes not only the Elements of a Comprehensive Nonprofit Marketing Plan, but also adds a section on Nonprofit Marketing the Quick-And-Dirty Way. If you're new to marketing, this book will help you get started off on the right foot. If you're an old hand at it, I guarantee you'll find new ideas you haven't tried before.

The first chapter, Ten New Realities for NonProfits, is straight talk that is relevant, on point, and a great primer on how things have changed over the last few years. If you're getting crazy marketing requests from your boss, lend them your copy for a quick read. It'll be an education.

Here are four tactics from the Guide you can use right away:

1) When defining your audience, use personas. If your audience is still "the general public," it's time to make a change. Build representative characters for each target audience; find photos that represent them and describe their age, educational level, hobbies, motivations, values, etc. in detail. Then, match your messages and communication channels to these personas.

2) Develop your storytelling skills. Nothing convinces an audience more than stories of real life struggle and achievement. Miller describes three plot lines -- the challenge plot, the creativity plot, and the connection plot -- you can use to put a human face on the work you do and gives a list of story ideas to help you get started.

3) Focus on the plight of one person instead of many. When asking for support, describe the needs of one person who represents your cause. Research shows that people are more likely to feel an emotional connection to one person, and be compelled to act because of that connection. A crowd, no matter how needy, just doesn't have the same power.

4) Think of your organization as a media mogul. It's time to think beyond the mainstream media. Let's face it, they're not that helpful anyway. The good news is that the technology exists to create and distribute your own brilliant content. Miller gives plenty of advice on how to use social media to engage supporters and give tips on how to create an editorial calendar that reduces the social media time suck.

I quickly discovered all I need to know about marketing my nonprofit's programs and events without ruining our small budget. This is an insightful, probably essential, book for those who aspire to excellence in the use of ones own body initially and subsequently others. I borrowed the book from my daughter, then bought one for myself which I lost and replaced. Read the testimonials - the experts are not exaggerating.

Hard slog as an overview, but provides good depth for the dedicated student

I read a lot of nerdy climate blogs, and have a heavy undergraduate-level background in geological science, so I used this textbook to get a better understanding of atmospheric composition and dynamics. Without guidance, I found some of the graphs a bit obscure, and know that several concepts would be much easier to grasp with animation. (It didn't help that the older graphs had been converted from grayscale to color, without updating the descriptive legend.)

Since it's from 2009, I wouldn't use it as a climate change knowledge base, as the science has exploded in data and understanding in the past 5 years.

An excellent text about a very complex and increasingly important topic

This book begins with an excellent summary of the basic ideas and importance of meteorology. it
then goes into detail about the many aspects of the subject in words, graphics and tables. The book
requires serious work on the part of the reader--as any good textbook does. For the book to be useful
to the reader it requires basic under standing of several aspects of physics, chemistry, and geography.

About the Author

Gordon Lewis is a dedicated street photographer with over 40 years of experience. He began his writing career answering letters from owners of Olympus cameras, Vivitar flash units, and Kiron lenses. From there he graduated to being a contributing editor to magazines such as Camera 35, Petersen's Photographic, and Camera & Darkroom. Through unforeseen but fortuitous circumstances, he leveraged his irreverent wit into a TV sitcom-writing career, with hit shows such as Amen, Family Matters, and In Living Color to his credit. Now reformed, he earns his living as an e-learning instructional designer for Fortune 500 companies. Gordon lives just outside of Philadelphia-which, not coincidentally, is an excellent location for street photography.

The idea of street photography seems easy. You get an impromptu photograph of someone on the street. That shouldn't require much thought, it might seem, until one has tried to do it, and returns with a sad collection of uninteresting images. There seems to be a real need for photographers interested in doing this kind of work to get some help as the publisher presumed when he asked the author to create this book.

The author offers chapters that talk about things like cameras and technique, look at the work of a few practitioners, suggest places where one can take street photographs, and discuss the styles of street photography. Lewis finishes up with his ideas on what makes a great street photograph. But most of this boils down to: have a small, unobtrusive camera; learn to work fast, at a moment's notice; and have a deep reserve of chutzpa to take pictures of complete strangers with or without their knowledge. A large supply of luck is also desirable. And yet with all of that, anyone who has tried (but not persevered) at street photography can tell you that you won't get many good pictures.

That's because street photography has to have content and knowing how to find it, recognize it and capture it probably can't be found in a book. Looking for something strange or wonderful is probably good, but some of the great street photographers have looked at the ordinary and in looking, made it extraordinary. In fact the most useful tool for a street photographer may be an inquiring mind. As folks say about tennis, or anything else that requires great skill, you've got to do it 10,000 times and you still may not master it. So far I haven't found much street photography skill between the covers of a book, although spending as much time as possible with masters like Henri Cartier-Bresson, or Elliot Erwitt, or Garry Winogrand can certainly help. I would have had greater confidence in Lewis' advice if his own photographs had approached closer to those greats.

That's not to say that this book can't help you become a street photographer. It does tell you the basics of the set-up of street photography, and if you haven't been able to figure that out from looking at street photographs, or you need a little encouragement, the book can be useful. Just don't expect to read this book and take great (or even good) street photos. After you've shot 10,000 you can decide if the book helps.

Less art, more randomness

I'm usually careful about being negative when it comes to books; even if it's not a great volume it probably took the author a lot of work to create. But all the same, there are good options and there are not-so-good options for spending your hard-earned dough. This particular book doesn't quite make the cut.

If you're buying this book for technical, or skill-based, learning, you're better off going somewhere else. The content is largely generic and the sort of thing that can be found anywhere on the web. I didn't get a good sense of the author's personal style or ethos. A better bet for technique would be The Street Photographer's Manual, also to be found here on Amazon.

Of course, another main reason you would buy such a book is to look at great examples of street photography, and enjoy the author's personal style. Sadly, most of what is contained in this book is very commonplace, with little to recommend it. I'm looking for poignancy, juxtaposition, humor, energy... all of those things which make a street photograph transcend time and location to speak to the larger human experience, but I'm having a hard time finding it in the work the author has chosen to show. It's almost as if the decisive moment was not waited for. I would like to be kinder, but I'm left with a feeling that this book was rushed to press by a publisher who wants to get in on the rising tide of modern street photography and not as a showcase of unique and powerful craft.

Also, the book itself is of very low quality. The cover and pages both feel too thin and just cheap.

Edit: 6-20-15. After letting this book settle in further, I actually took an additional star off of my review. Often street images bear multiple visits to really soak in their flavor and contents, but I can honestly count on one hand the images in this book that even interest me. On the other hand, dozens of them exhibit what I would call the wrong moment, or lack of patience or vision... "Uninspiring" is the word that really describes the author's work here depicted, just as "uninspired" is the right word to describe his advice. There is just no insight to be had here. I wanted to like this book, but it has left me quite cold.

Immerse Yourself in a Creative Perspective

Gordon Lewis' Street Photography is both a creative inspiration and also a pleasure to read. If I had to summarize it in one word, it would be "witty." By that I mean that Lewis is elegant, illuminating, and often funny, both in his writing and in his photography. Being able to hear his voice come through in his writing and in his photography (and the photography of others that he includes) really helps the reader understand Lewis's creative point of view. He shows us instead of telling us, and it is contagious.

This is a book for someone who already knows how to use their camera technically, and who wants to improve their aesthetic/artistic ability in the domain of street photography. Obviously, the ability to "read" street photography competently helps one's creative ability to produce quality street photography. Because Lewis's voice comes through in both prose and images, one learns how to see the world as Lewis does.

Let me give a simple example. Early in the book, he shows a photo of rich reds, complex architectural structures, and warm sideways light streaming in to bring it all alive. Only after admiring the photo did I read the caption, where I discovered, to my shock, that the photo was taken in the entryway of a Target department store (!!). When I looked back again at the photo, I realized that it could well have been my own local Target, and I wondered: how many times have I blithely walked past this incredible play of light, color, and structure, not bothering to look, because it was a Target? Throughout, Lewis shows how apparently boring everyday scenes can be turned into very interesting photos--if you just know how to look.

I have many photography and art books with titles that have variants on "how to see," "how to read," "seeing like a photographer" and so on. Rarely do I come away from them--whatever else their merits are--feeling like I am more capable of seeing like a photographer or of reading photography; like anything else, such knowledge is slowly and painstakingly acquired. Yet this beautiful little book Street Photography delivers as much of that as one could reasonably hope in a surprisingly compact space.

Again, I think what made the book work so well is the unusual connection between words and images. Commonly in photography books, the images are stunning and the words are either so few that they don't do much, or so turgid that you know why the author became a photographer and not a writer! This connection between words and images immerses the reader in Lewis' creative point of view. I'm glad for the few hours I spent in it, and I look forward to revisiting this book next time my creativity seems dried up, to remind myself that I have merely forgotten how to see.
